Fresh Lima Beans


Two bean postings in a row? Well, what's a girl to do - these fresh lima beans were just sitting in a bin with a cute sign above them at the Irvine Center Farmer's Market when I happened upon them. I'd already purchased other lima-like beans from another vendor (king beans), but I just couldn't resist them. I found them at the Sweredoski Farms stand.


If you're ever at this farmer's market - you have to stop by and say hello to John Sweredoski. He's quite the character and his infectious positive spirit will brighten your day.

John gave me a quick method for cooking them, and had he not, I likely would have taken them home and boiled them or something equally blasphemous. His way was spot on.

Serves 2

Ingredients:
1 Tablespoon extra-virgin olive oil
1 Tablespoon salted butter
1 1/2 cups fresh lima beans
2 large cloves of garlic, minced
kosher salt to taste
fresh cracked pepper to taste

Heat skillet to medium heat, add oil and butter. Then add lima beans and cook, stirring occasionally, for about 15 - 20 minutes. Add garlic, salt, and pepper, and saute a minute or two longer.


I also picked up some squash blossoms from John. Even at this late date he's still got them blooming and expects them to continue until Thanksgiving. More on those tomorrow. Wow, it's great to live in Southern California.

  1. Wow, I think you just won over this lima bean non-eater- only have bought them frozen for soup. My mom made them, but she over cooked them, and I hated them growing up, so I think this just won me over. I am also jealous you live in SCal too!

  2. I've never cooked beans like this...it sounds great. I bet you end up with lots of flavor! Love the garlic in it.
    And lucky you to have squash blossoms until Thanksgiving...I haven't seen any in Northern California for weeks...

  5. Thanks much this should help! I usually cook other beans along with vegetables, but I never cooked butter bean on its own before. As a West Indian I would cook oxtail and butter beans also sometimes with cabbage or corned beef. I'm a budding vegetarian so hence my search for a yummy way to cook my butter beans!

  6. This is so good! Just made it this evening. This is my new favorite way to make lima beans. Of course, it was the first time I've ever seen fresh lima beans in the grocery store too!

  9. I buy all my produce from John every week at the Long Beach Farmer's Market. Momma Sweredoski's recipes are always good (and simple) and this one in particular. What a delightful character John is!
