(Not Tricked Up) Tuna Salad
I don't know about you, but I have a habit of trying to trick up my tuna salad with all kinds of things - pecans, pine nuts, dried cranberries, pickles, celery, etc.  I just don't know when to quit.

Well this time I did it. I refrained. I only added 3 ingredients (aside from salt and pepper) to my tuna and it was quite possibly better than I've ever made before.

Maybe it's the tuna (I used the fresh caught tuna my sister-in-law Deb purchased from a Garibaldi fisherman at the dock, then canned herself the same day) or maybe it's the simple goodness that comes from creating just the right flavor profile that enhances the tuna, but doesn't steal the show. Either way I can take credit for neither. My other sister-in-law Sunny made it this way last week and since then, I'm a convert.

absolutely nothing except the fresh tuna
no water..no salt..nothing

to the tuna I added red onion, red apple and mayonnaise
(plus salt and pepper)

Serves 2 (about 1/2 cup each)

Ingredients:
3/4 cup tuna, drained (just use your favorite kind)
1/2 of a very small red onion or 1/4 of a regular size, diced
1/4 of a red apple, diced
2 Tablespoons good mayonnaise (I used Best)
1/2 teaspoon kosher salt
lots of fresh cracked pepper

In medium bowl mix all ingredients together. Serve with crackers or make a sandwich using your favorite bread.

  3. Beautiful looking tuna salad - I agree that keeping it simple seems to work best. One of my favourites is tuna, celery, preserved lemon and flat-leaf parsley with a lemony vinaigrette.
    BTW I'm voting for you - good luck.
    Another BTW - I made your pork chops with pistachios and corn chips a few nights back - was a big hit around here - thanks.

  4. Hi Sue! I will have to try it your way - I actually have some preserved lemons in my fridge that I made a couple of months ago and have been waiting to use. This sounds like a great use and I love the lemon vinaigrette idea, too. I would've never thought of that even with all my normal "tricking up of tuna salad" lol :-)

  8. I must say - this is pretty interesting!!! With applestoo? Never tried that. but I did tried it with other stuff. Maybe I should give it a try and see how I like it. I'm also a tuna lover myself :) hehehes. Canning is a great idea. So when your hungry - there's always something to look forward to :) hehe

  9. I have heard of people adding apples to tuna instead of onions with little bits of pecans, but never heard of using apples and onions together, I just do not like fruit in my food, but this tuna looks great.
