Healthy Pizza |
How do you lighten up a pizza without skimping on flavor or quality of ingredients? Use Australian Mountain Bread as the dough. What's Mountain Bread, you say? Well, it's a paper thin bread that can be used as a wrap, layered as I did with this pizza, or used in a multitude of other ways.
The variety I bought was the organic one - it's made with organic wheat flour, filtered water and iodized salt - just 3 simple ingredients. And here's the best part - each serving (1 wrap) is only 72 calories. I'm not one to cut calories if it means I lose out on wholesome, flavorful ingredients but this product cuts the mustard.
The package comes with 8 thin wraps or sheets and here's how I made the pizza:
Serves 2
Oven 350 degrees F
1) Layer 4 wraps together, one on top of the other with a light brushing of water in between each layer
2) Brush the top lightly with olive oil, add fresh herbs and spices, pile on the toppings of your choosing (in this case - I used cooked Italian sausage, roasted red peppers, sun-dried tomatoes, goat cheese and Italian fontina)
3) Place on parchment-lined baking sheet (or spray baking sheet with oil) and bake in the oven until cheese melts
It's that easy.
The pizza itself was approximately 9 inches x 9 inches and I cut it into 4 equal pieces. 2 pieces were more than enough for me.
I recently discovered this product at the Bristol Farms in Newport Beach, CA, which just started carrying it. In doing research to see how widely available it is, unfortunately it's fairly new to the US so it's not too easy to get your hands on just yet. From the Mountain Bread website there's a link to a distributer - No Worries Natural Foods - and they have a list of stores in a few states, or you can follow their instructions for online ordering. I suspect this will catch on and soon become more widely available at stores like Whole Foods and the like. Perhaps put in a request at your local specialty or health food market. It's well worth the effort if you're looking for healthy, tasty alternatives.
